All About Red Cabbage Microgreens!
Here’s a great microgreen that generally gets overlooked. The flavour is best described as a cross between broccoli and full sized red cabbage. It’s sweet, earthy, and looks great in a salad or on a wrap or sandwich.
Red cabbage is a cruciferous vegetable like broccoli and kale, which means it’s loaded with sulforaphane, vitamins A, C, B6, E, and although technically not an actual vitamin, the chemical compound known as vitamin U. Vitamin U has been found to assist in the prevention and repair of stomach ulcers (both peptic and gastric).
Red Cabbage has exceptionally high levels of Vitamin K, and as a microgreen, recent studies have shown concentrations of beta carotene at 260 times the levels compared to full sized red cabbage (by weight). That’s not a misprint, two hundred and sixty times the concentration!!
Red cabbage contains Anthocyanin, a natural compound that gives it that reddish purple colour. Anthocyanins are great antioxidants that inhibit the formation and growth of cancer tumors. They also limit oxidative stress in the body. (look THAT up for some extra reading!)
Red cabbage is high in isothiocyanates which combat carcinogens by neutralizing them and reducing their poisonous effects. They work by inhibiting cancer cell proliferation.
