How about Arugula?
Arugula is one of the most popular greens for salads, with a nice peppery taste that adds depth to any dish, in fact, you’ll find it in most garden and salad pre-cut mixes.

But Arugula microgreens are more than just tasty. As part of the cruciferous vegetable family, they're super healthy. Arugula microgreens pack a nutritional punch that’s actually better than spinach. Why is that? Well, Arugula has significantly lower amounts of oxalates (oxalic acid) that stop the body from absorbing calcium. Oxalic acid, found in most leafy green vegetables, can, in high doses (or for individuals with food sensitivities) cause kidney stones.
Arugula microgreens are low in fat and carbohydrates, have high levels of vitamins C and K, along with beta carotene, folate, magnesium. And vitamin E? Forty-seven times the concentration versus full sized Arugula!
Arugula is being studied as a potential treatment for type 2 diabetes, as insulin responsive cells have been affected by Arugula leaf extracts. It may also help in the treatment of some forms of dermatitis as Arugula is able to tone down the activity of inflammatory cytokynes (how about that for a mouthful? Excuse the pun!)
